Ingredient Substitutions for Chicken Keema Recipe
- Instead of small onions: You can use finely chopped onions. I would prefer Small Onions for the good and delicious taste.
- Cooking Oil: You may use Sunflower oil, Groundnut Oil, Coconut oil, or sesame oil.
- Instead of Red Chilli and Coriander Powder: You may use Kulambu Chilli Powder.
- Eggs: Eggs give richness and help bind the chicken together. If you want an egg-free version, you may skip it.
- Curry Leaves: Fresh curry leaves give the aroma to the dish. If you don’t have them, you may avoid them.
- Chilli Powder: If you need less spicy, you may use Kashmiri Chilli Powder. That gives beautiful redness to the recipe.
- Garam Masala: Homemade garam masala is the best choice. If unavailable, you may choose any brand masala or chicken masala.
- Green Chillies: You can replace the green chillies with dry red chilli.
Step-by-step process:
Step 1:
Add the boneless chicken to a mixer jar. Pulse it until it becomes coarsely ground. Do not add water while grinding. The slightly coarse texture gives the best result.

Step 2:
Heat oil in a wide pan over medium heat.

Step 3:
Add cumin seeds. Let them crackle and release their aroma.

Step 4:
Add the chopped small onions. Cook until they turn light golden.

Step 5:
Add the chopped tomato. Cook for about 2 minutes. The tomato should soften slightly but should not become completely mushy.

Step 6:
Add the coarsely ground chicken. Stir continuously for about 4 minutes to break apart the chicken evenly.

Step 7:
Cover the pan and cook for 2 minutes

Step 8:
Add ginger garlic paste. Mix well until the raw smell disappears

Step 9:
Add chilli powder, coriander powder, turmeric powder, cumin powder, garam masala, and salt.
Mix everything well.
Do not add water. Chicken naturally releases enough moisture for cooking.

Step 10:
Cover and cook for another 3 minutes until the chicken is fully cooked.
Step 11:
Push the cooked chicken to the sides of the pan.
Break the eggs into the center.
Add a little salt and black pepper powder.
Cover and cook for 1 minute

Step 12:
Gently scramble the eggs and mix them thoroughly with the chicken.

Step 13:
Add chopped green chillies and fresh curry leaves.
Mix for one final minute.
Serve hot.

Expert Tips for Perfect Results
- Use fresh boneless chicken for the best texture.
- Grind the chicken only until coarse. Overgrinding creates a paste.
- Cook over medium heat for even cooking.
- Do not pour water into the pan. Chicken contains enough moisture.
- Mix the eggs gently. Overcooking can make them dry.
- Use small onions instead of regular onions for authentic South Indian flavor.
- Fresh curry leaves make a noticeable difference.
- Serve immediately for the best taste.
Common Mistakes to Avoid
- Grinding the chicken into a smooth paste may feel like a cutlet mixture. So, always coarse-grind the chicken.
- Adding water while cooking makes the chicken mushy instead of crumbly.
- Cooking on very high heat evaporates the moisture soon, but the chicken will be half-cooked.
- Adding too much tomato gives a tangy flavor.
- Using too much garam masala may slightly have a bitter taste.
- Overcooking the eggs makes the podimas dry and rubbery.
- Skipping the curry leaves may reduce the unique South Indian aroma of this dish.
- Not breaking the chicken into small pieces while frying may lead to some parts of the chicken feeling undercooked.
Easy Variations You Can Try
- Egg-Free Chicken Podimas: Skip the eggs if you want a simple minced chicken version.
- Spicy Chicken Podimas: Increase the chilli powder or add crushed black pepper for extra heat.
- Chettinad Style: Add freshly ground fennel, black pepper, and curry leaves for deeper flavor.
- Vegetable Chicken Podimas: Mix in finely chopped capsicum, carrots, or green peas for added nutrition.
- Herb Version: Finish with chopped coriander leaves for fresh flavor.
